Soft Aged, Washed Rind, or Bloomy Rind Cheese – Featuring: Bosina Robiola (Caseificio dell’Alta Langa)
Bosina is a soft ripened “due latte” Robiola made of cow’s milk and sheep’s milk from Piedmont, Italy. Encased in a bloomy rind that is milder than brie and boasting a velvety center, Bosina shines on any grazing board. It’s not easy to achieve this kind of runny yet robust and toothsome texture. Enjoy notes of butter and hay, with a perfect balance of sweet and salty.
Blue Cheese – Featuring: Cambozola Black Label (Käserei Champignon)
Creamy, cow's milk, blue triple cream style cheese from Bavaria, Germany. Considered a cross between camembert and gorgonzola, the longer and colder aging of Cambozola Black Label creates the signature dark grey bloomy rind and its signature refined taste. Sweet, nutty, with mild blue veining, this cheese is subtle and satisfying.
Semihard or Hard Aged Cheese – Featuring: Midnight Moon (Cypress Grove)
Semihard, aged goat's milk cheese from California. Think goat gouda on another level with the perfect balance of salt and butter. Aged 6+ months, the formation of protein crystals lends the slightest salty crunch to texture of this cheese. Even goat cheese skeptics love it!
Cured, Dry-Aged Meat – Featuring: Prosciutto di Parma DOP (Ferrarini)
Not all prepackage prosciutto is created equal. Ours is sourced from a family-run business in Emilia-Romagna, Italy that has been perfecting its craft since 1956. A perfect balance of saltiness and delicate softness, this prosciutto seems to melt in your mouth.
Dry Cured Salami – Featuring: “Manhattan” with Bourbon and Sour Cherries (Brooklyn Cured) Inspired by the flavors of the Manhattan cocktail, this salami is traditional with a twist. Made in Brooklyn, NY.
Spicy/Savory Dry Cured Salami – Featuring: Hot Sopressata (Coro Food Artisan Meats)
Just the right amount of kick. We have tried a lot of hot sopressata, and this one takes the cake. Bonus: there is no peeling required from this one - slice and serve. From a women-owned business in Seattle, WA.
Pickles – Featuring: Cornichons (Trois Petits Cochons)
French style sour gherkins. Again, not all created equal. Although we love exploring different takes on a classic, sometimes an original just can’t be beat. Our choice is just that – classic, briny and crisp. Made by an artisanal producer in Brooklyn, NY.
Olives – Featuring: Natural Carmona Mix (Losada)
A selection of traditional olives typical to Southern Spain, the Carmona mix includes gordal, cuquillo, zorzalena and cornicabra olives in a natural cured brine, presenting a dynamic mix of sizes, colors, textures and flavors. Aceitunas Losada bring heirloom Spanish olives from farm to table with 60 years of family tradition, overseeing the full process from hand pruning and harvesting to curing and packaging in Carmona, Andalusia.
Almonds – Featuring: Marcona Almonds, Fried & Salted (Matiz)
Marcona almonds are known as the chef’s choice in almonds and add the perfect crunch to any charcuterie spread. Their high fat content delivers a superior creamy texture. Matiz fries them lightly and adds only a small amount of salt giving you the choice to serve as is or with a tiny drizzle of fresh olive oil and a sprinkle more of sea salt to taste. Made in Spain.
Jam/Spread – Featuring: Shallot Confit with Red Wine (Quince & Apple )
Perfect balance of savory and subtle sweetness. You will want to put it on everything. This jam is an understated champion in this box and a customer favorite.
Jam/Spread – Featuring: Visciolata Wild Cherries Extra Preserves (Agrimontana)
Sweet, tart, delicious, without any added colors or pectin. Just beautiful fruit preserves. Enough said.
Bread – Featuring: Demi Baguette Twin-Pack (Essential Baking Co.)
As far as take-and-bake baguette goes, this is our top choice. Crusty on the outside and soft on the inside when baked. This take-and-bake boasts an impressive shelf life while maintaining a simple, clean, and Certified USDA Organic ingredients list. The next best thing to fresh baked.
Crackers – Featuring: Olive Oil & Sel Gris Organic Sourdough Flatbread Bites (Rustic Bakery)
Delightfully simple, perfectly bite-sized, and strong enough to spread cheese on without breaking the cracker. These go with everything and are great.
Dessert - Featuring: Qantu Maple & Maras Fleur de Sel Chocolate Bar
Iconic Canadian Maple and Peruvian Fleur de Sel, with Chuncho cacao – This dark chocolate is rich and creamy. Notes of sweet spices, banana, cinnamon, warm maple. Made in Montreal, Québec, Canada.
Wine Pairings:
This box has bold flavors, so we recommend picking wines that can stand up to the flavors, or wines that are light enough not to interfere.
White: Any chardonnay from Burgundy is a great choice. We like a Bourgogne Blanc with a little depth or a Chablis as a perfect palate cleanser.
Red: Deep, fruity pinot noirs from California and Oregon are a great choice. So are California Cabernets. We also love most Rhone wines with this box, especially a bright Gigondas.
Sparkling: Any dry, sparkling white wine from France is always a great pairing for cheese. We prefer options from Jura or Alsace.
